PUDHINA CHUTNEY
What we need (Ingredients)
- 1/2 tbsp. -
Cumin Seeds
- 1 tbsp. -
Coriander (Dhaniya) Seeds
- 4 tbsp. - Ground
nuts
- 3 - Dry Red
Mirchi
- little -
Tamarind
- Fresh Mint (Pudhina)
Leaves thoroughly washed with plain water
- 7 to 9 tbsp. Oil
- Salt for taste
- Finely chopped
raw Onions
- For Seasoning
(Oil + Mustard seeds + Cumin Seeds + Urad Dal + Asafoetida(Inguva) + turmeric
+ Curry Leaves(Karivepaaku )
1. On the
stove, place a pan and Add 2 to 3 tbsp. of oil, Once oil is heated, add Cumin
Seeds, Coriander seeds, Ground Nuts and Dry Red Mirchi and fry until golden
brown color. Remove from flame and Place this mixture in Mixcy Jar and allow it
to cool
- Take little tamarind and soak in
water (based on your desire of sourness you can add more tamarind if
required)
- Now add 2 to 3 tbsp. of Oil in pan
and add washed pudhina(mint) leaves and fry for 5 minutes.. Remove from
flame and allow it to cool.
- Grind all mixtures à Step 1 content and
make a paste + Add soaked Tamarind Step
2 + Add leaves which was prepared in Step 3 + Finally add SALT and grind
until all the ingredients are crushed properly. Place the chutney in a
serving bowl.
- Seasoning à Place a small
pan on the stove and add 2 to 3 tbsp. of oil , once heated add Mustard
seeds + Cumin Seeds + Urad Dal + Asafoetida(Inguva) + pinch of turmeric ,
fry until golden brown and finally add Fresh Curry Leaves. Turn off the flame.
- Add the seasoning to chutney which
is prepared in step 4 and mix it
- If desired add finely chopped raw onions to chutney
- Tasty Pudhina Chutney is ready
